E!13276 UK project with PolyChord Ltd., Queen's University, Belfast, NRC, and University of Guelph titled “FoodScan - combining pathogen microbiological developments and data science”. The objectives of this research are to investigate the growth kinetics of Salmonella and Enterococcus (Salmonella surrogate) in low moisture foods including Walnuts, Sunflower, and Wheat, by developing microbial survival data of the Salmonella and Enterococcus in the three foods, followed by analysis of the data using artificial intelligence approaches to describe the behaviour of the bacteria via predictive mathematical growth models. Agri-Neo will provide microbial cultures, will treat foods with various parameters to be analyzed by PCR for efficacy, and will test the end model created.
