Published purpose

Chasse-Marée wishes to improve the notoriety of Quebec marine products by responding to the need to create processed products with high added value. Convinced of the under-exploited potential of canning products, the Chasse-Marée team wishes to develop a complete line of high-end canned seafood products from products caught in Quebec. This project involves many challenges in terms of product development. Indeed, the impact of the heat treatment required to ensure commercial sterility makes the preservation of the organoleptic qualities of marine products very complex. Various analyses and sensory evaluations will therefore have to be carried out to ensure the quality of the products developed.
