Published purpose

Utilizing advanced nanotechnology expertise from drug delivery systems, this Project will explore the use of biomolecules from pulse crops to develop protein nanoparticles. These protein nanoparticles are biodegradable and edible but will perform the important function of stabilizing and protecting molecules which contribute to taste and nutritional value from heat and chemical damage during processing. This Project will explore the use of two primary protein products from pulse crops as the capsule as well as exploring the effect of removing biocomponents which could cause allergenicity issues.
