Published purpose
This project will seek to identify and modify a yeast strain that will convert fermentable sugars primarily or exclusively into glycerol, while minimizing the production of ethanol, resulting in a product that is less than 0.5% ABV (alcohol by volume). CO2 would be produced as a byproduct of these sugars-to-glycerol fermentations, allowing for these innovative techniques to be applied to sparkling wine production. The low or nominal-alcohol wines produced using this new yeast strain could present unmatched qualitative advantages when compared to the present qualitative compromises and challenges of de-alcoholization via reverse osmosis.
