Published purpose

As part of the international consortium project “WMP-Whitecrest Mycelium Project”, this project will focus a proprietary method for the production and processing of aerial mycelium produced in specific environment, and then preliminarily processed into a food ingredient before being finally transformed by MyForest Foods into MyBacon, a whole tissue meat alternative. The production of a pure aerial mycelium for human consumption is a completely novel paradigm in fungal industry. As such, Whitecrest is excited to be on the leading edge developing this technology, and the systems required to industrialize it. Whitecrest and Limbraco will develop the required equipment and systems for the first Canadian aerial mycelium facility.
