Published purpose

NAIT’s Centre for Culinary Innovation (CCI) is a Canadian leader in food product development. Located in Edmonton, Alberta, the diverse team combines culinary arts, food science, and market insight to bring leading-edge food product ideas to life. Using NAIT’s research and development expertise for food product development, NAIT is well-suited to providing innovation assistance and commercial resilience to agri-food SMEs in Canada, contributing to their economic success. Transitioning from an idea to Retail Readiness involves more than just multiplying formulations up and finding more packaging. Even the leap from farmers’ markets to commercial scale production generally requires rethinking and tweaking of product formulations, changes in suppliers, and managing production. This is where NAIT CCI has the ability to guide SMEs and food entrepreneurs through the pathway to retail readiness.
