The project replaces conventional additives by optimising natural fermentation through AI-guided microbial pathway selection, enhancing aroma, flavour, and functionality. This work also enriches the AI model’s training dataset, advancing the commercialisation of AI-driven biosciences and strengthening Canada's leadership in sustainable agri-food innovation.
